CHOCOLATE SUNDAY

Lazy mornings were made for chocolate...

Slip down to Wellington's historic Old Tannery for exclusive access to master chocolatier, Philippe Lelard's ateljier.

Across more than 20 tasters, explore the Fynbos landscape through the elements of air, water, fire and earth - translating the aromas, flavours and textures of Cape Fynbos into an extraordinary tasting experience.

You'll also be invited into the chocolate factory to experiment, create and craft your own chocolates to take home - and, of course, expect a few chocolate stains along the way.

AIR: FLOWERS & HERBS - A Delicate Breath of Fynbos

The journey begins with the ephemeral character of the landscape: flowers, leaves, herbs and wild aromatics. Light, fragrant and fleeting, these flavours evoke the mountain air and the distinctive botanical character of the Hawequas.

WATER: FRUITS - The Freshness of the Floristic Region

Freshness, acidity and juicyness take centrestage. Fruit brings contrast and movement to chocolate, evoking rain, mountain streams and the cool waters that flow through the Wellington landscape.

FIRE: SPICES - The Warmth of Fynbos

Heat, intensity and transformation awaken the palate. Spices create unexpected connections with chocolate, reflecting the energy of the sun and the wild, aromatic landscape.

EARTH: CHOCOLATE & NUTS - The Depth of the Land

The final chapter is rich, roasted and grounded. Close your eyes and let the evolving texture of breaking nuts and melting chocolate evoke a sense of the land, a living mixture of soil and seed, a grounding in the mountainous landscape of Wellington.

From air to water to fire to earth, the tasting builds progressively in intensity, moving from the fleeting perfume of Fynbos to the profound richness of cacao and roasted nuts - always rooted in the botanical identity of South Africa.
